Grilled Chicken & Cheese Naan Pizza

 


This recipe comes from the package of naan I got from Aldi (brand "Specially Selected").  I had picked it up to go with the butter chicken simmer sauce I had also gotten from Aldi and had plenty leftover, so I thought we'd give this recipe a try.  It turned out great!  It might be my new favorite way to make a bit of pizza for us without the work of making and rolling out dough.  And it's quick!!

1/2 package Specially Selected(r) original naan (4 pack)

1/2 cup basil pesto sauce, homemade or store bought

3/4 shredded mozzarella cheese

1/2 cup grilled chicken breast, diced into small pieces

1/4 cup roasted red peppers, diced into small pieces

1/4 cup sliced black olives

1 Tbsp chopped fresh basil

salt and freshly ground pepper

1. Preheat oven to 400oF

2. Spread pesto sauce over both naan, bubble side up.  Add roasted red pepper and the diced grilled chicken breast.  Top with the mozzarella cheese, sliced black olives, chopped basil, salt, and pepper.

3. Place naan directly on the middle rack of preheated oven.  Cook for about 6-7 minutes or until toppings and naan are heated through and the cheese is fully melted and starting to brown.  Remove from oven, slice and serve.

Chicken Cordon Bleu Pizza

This is super easy and really tasty!  I don't normally make recipes that use so many pre-made ingredients, but sometimes you just want something quick and simple.  And yummy!

This comes from the April/May 2010 issue of Taste of Home.  I don't have a picture, but I'll get one next time I make it!

Chicken Cordon Bleu Pizza

1 tube refrigerated pizza crust (13.8 oz)
1/2 cup Alfredo sauce
1/4 tsp garlic salt
1 cup (4 oz) shredded Swiss cheese
1 1/2 cups cubed fully cooked ham
10 breaded chicken nuggets, thawed and cut into 1/2 inch pieces*
1 cup (4 oz) shredded mozzarella cheese

Unroll dough into a greased 15 x 10 x 1 inch baking pan (or whatever you would normally make pizza in!).  Flatten dough and build up edges slightly.  Bake at 425 for 8-10 minutes or until edges are light browned.

Spread with Alfredo sauce.  Sprinkle with garlic salt and Swiss cheese.  Top with ham, chicken nuggets and mozzarella.  Bake for 8-10 minutes or until crust is golden brown and cheese is melted.

* When making chicken nuggets, I sometimes find that they get soggy if you let them just sit out to "thaw."  You might want to cook them first to keep the coating crunchy instead.

Easy Tomato Basil Pizza


When this recipe says EASY, boy do they mean it!

This is a quick and tasty meal for a busy weeknight.  Or just for something delicious for dinner.  I've become a huge fan of Philly Cooking Creme!  The couple of $1.50 off coupons I've been getting lately sure have helped!

This recipe comes on the top of the Italian Cheese and Herb Cooking Creme container, or you can find it on the Kraft Foods website.

Easy Tomoato Basil Pizza

1 ready-to-use baked pizza crust (12 inch)
1/2 cup PHILADELPHIA Italian Cheese and Herb Cooking Creme
1 tomato, thinly sliced
8 fresh basil leaves, torn
1/2 cup KRAFT Shredded Mozzarella Cheese
Directions:
Heat oven to 425ºF.
Spread pizza crust with cooking creme; top with remaining ingredients.
Place crust directly on middle oven rack.
Bake 10 to 12 min. or until cheese is melted.
